Nutella Banana French Toast


Breakfast is the most important meal of the day...or so they say. It was never a high priority to me until I became a parent.  Suddenly, I was faced with feeding another person breakfast every day of the week...Id never even managed that for myself!

We started out simple enough...pureed baby foods, on to diced, soft fruits and simple cereals...but as my oldest got bigger, those weren't sufficient. The grocery store aisles are filled with sugary cereals and highly processed "quick-fixes". That didn't feel like a good option for a toddler. I also didn't feel like cooking a large breakfast, with biscuits, meats, etc. for myself and a small child felt like the right option.

Since that time, Ive searched for and developed my own recipes that are somewhere in between.  They may use some store-bought ingredients, but I try to use "real", non-processed ingredients when possible...I like to know exactly what we are eating.

Thats where I came up with this. I wont call it "healthy", but it uses simple ingredients, is quick to make, delicious and child (and mommy) approved!

Nutella-Banana French Toast
I used a hearty white bread. It holds up well, and is my favorite bread for french toast. I spread 4 pieces of bread each with about 1-2 tablespoons of Nutella. I topped 2 slices with sliced banana rounds. I placed the other 2 Nutella topped pieces of bread, Nutella side down, on top of the bananas.
Next, I made my batter. I used 2 eggs, lightly beaten, milk, all purpose flour, cinnamon and granulated sugar. I dipped each side of one sandwich into the batter, and placed it onto a hot griddle pan that I had already coated with olive oil spray. I cooked until browned on both sides. Repeat with second sandwich. Enjoy!

Nutella Banana French Toast
Serves: 2
4 slices hearty white bread
Nutella or other Hazelnut spread
1 ripe banana
2 eggs, lightly beaten
1/2 cup milk (I used 2%)
1/4 cup all purpose flour
1 tablespoon granulated sugar
1 teaspoon cinnamon
1. Spread one side of each slice of bread with hazelnut spread.
2. Slice banana into thin rounds. Top 2 slices of bread with sliced bananas. Place the other 2 slices of bread on top, Nutella side down.
3. Next, make the batter. Combine eggs, milk, cinnamon, sugar, and flour. Whisk to combine.
4.Spray a griddle or griddle pan with non-stick spray or butter. Preheat on medium-high heat.
5.Dip both sides of one sandwich into batter carefully. Place onto hot griddle. Cook 1-2 minutes on each side until browned. 
6. Repeat steps 3-5 with second sandwich, reducing heat if needed.

How many learning activities can you make with one $2 package of plastic Easter eggs? My son and I (unintentionally) made it our mission to find out! During our weekly grocery trip, I picked up a bag of plastic Easter eggs, with the intention of using them for a letter matching activity. I wrote an upper case letter on the top half of an egg, then the lower case letter on the bottom half. I broke each egg in half, and hid them all around our living room. Maddox went on an egg hunt to find all of the pieces. Once he found them all, he worked to find the matching letters and put the eggs back together. Originally, that was the extent of the activity. But once we got started, we took it a step further, and turned it into a phonics/vocabulary lesson.  He put all of the eggs into a container. He drew out one egg at a time, read the letter, made it's sound, and named a word that started with the letter. We then sorted the eggs into piles of vowels and consonants. Later in the day,...
